Apple Sauce Cake

 

Preheat oven to 350º 

Butter and flour a bundt pan.

 

2 ¼ cups flour

1 tsp baking soda

½ tsp salt

1 ½ tsp cinnamon

1 tsp ground allspice

1 tsp ground nutmeg

¾ cup pecans (chopped medium fine and lightly toasted in oven- taking care not to burn)

1/3 cup butter

1 tsp grated lemon peel

1/3 cup shortening

¾ cup sugar

2/3 cup light brown sugar, lightly packed

2 large eggs

1 medium sized tart apple (like a Granny Smith) peeled and chopped medium small to

make about 2/3 cup

1 tsp vanilla

1 cup sweetened bottled applesauce

 

Sift flour, soda, salt and spices together three times.  Stir in nuts and set aside.

Cream the butter, add the lemon peel.  Beat until smooth.  Add the shortening and beat.

Add the white sugar a little at a time while mixing.  Then add the brown sugar. Beat.

Add the eggs, then the apple and vanilla. 

Reduce speed on the mixer and gradually add in the flour mixture alternating with the applesauce.

 

Bake about 55 minute or one hour until a toothpick comes out dry. 

 

Rest cake for 10 to 15 minutes and then invert on to a rack and remove the pan.
